Baked Halibut Dijon

Halibut is some of the best tasting sea food.  It's great in so many ways.  Here is a cooking method that will have your mouth watering even after you've finished eating.  We've tried this on several different types of fish, and they've all been great. It's pretty easy to fix, and requires that you bake the fish, baste it, and then broil it for a short period of time. We've had great times with this recipe, and we think you will too.

Stuff You Need

    2 tablespoons light mayonnaise
    1 tablespoon lemon juice
    1 clove finely minced garlic
    1/2 teaspoon Dijon mustard of any type
    1 tablespoon grated Parmesan cheese
    1 thin green onion , finely sliced
    1/8-1/4 teaspoon Tabasco sauce
    2/3 lb halibut fillet
    2 teaspoons lemon juice
    1/8 teaspoon salt
    fresh ground black pepper

To Get It Ready

Prepare the Topping:

Combine the mayonnaise, garlic, lemon juice, Parmesan, Dijon mustard, green onion and Tabasco Sauce.

Prepare the Halibut:

Place the fish fillet on a broiling pan. Sprinkle with lemon juice, salt and pepper.
Bake at 450-degree for 12 minutes per inch of thickness, or until fish tests done.
Take the fish out of the oven
Switch the oven to broil
Spread the topping over the fish.
Put the fish back in the oven, but on a rack within an inch or less of the broiling element.
Broil for about 1 minute or until golden brown.

Serve with asparagus sauteed with onion, garlic,and a dash of tarragon. Add a green salad with a light dressing and your meal is complete.
