Tuna Steaks

We're always looking for great tuna recipes.  This one is amazing. Even if this is your first time cooking tuna steaks you'll enjoy the flavors and aromas. With the fresh cilantro, this smells great while it is cooking. This recipe is at the top of the list for taste. The tuna will be moist and flavorful.  If you are sensitive to cilantro, use about half of what's called for and add a pinch of Tarragon. Leftovers are amazing. The steaks are even better the next day as they absorb all the flavors while staying moist. Enjoy!

Stuff You'll Need

    1 1/2 cups water
    1 tablespoon fresh lemon juice
    1 teaspoon cayenne pepper
    salt and pepper to taste
    2 (4 ounce) albacore tuna steaks
    3 kumquats - rinsed, seeded and sliced (or a small orange sliced with peel)
    1/3 cup chopped fresh cilantro

Make It Ready

    In a medium saucepan over medium heat, mix water, lemon juice, and cayenne pepper. Season with salt and pepper. Bring to a gentle boil. Place tuna steaks into the mixture, and sprinkle with kumquats and cilantro. Cook 15 minutes, until fish is easily flaked with a fork.
